Winemaking
At Revana we produce a single varietal of wine, Cabernet Sauvignon. This singular focus affords us the opportunity to pursue a level of quality and artisanship unique to the great wines of the world.
Harvest
The style of the Revana Cabernet is driven by each vineyard’s unique site-specific climate and terroir. The grapes are hand-harvested, hand-sorted, and finally optically sorted to ensure that only the very best fruit goes into each vintage.
Fermentation
Using minimal intervention winemaking techniques to preserve the character of the vineyard, we ferment each individual vineyard block separately based on its unique ripeness. This gives the winemaking team complete control over the range of expressions coming from each section of the vineyard.
Aging
After fermentation is complete, each of the vineyard blocks is aged for 20 months in carefully selected French oak barrels from some of the finest cooperages. As the wine ages, our winemakers, Thomas Rivers Brown and Geoff Davies, closely monitor the development of flavor and character in each barrel.
Blending
Finally, our winemakers find the greatest expression of each vineyard block by selecting only the best lots for the final blends. The wines are then bottled and allowed to rest undisturbed until they are released.
The resulting Revana wine, crafted from meticulously grown Cabernet Sauvignon grapes, is aromatic, plush and elegant with a long, lingering finish.
